Is the Green Stuff Normal?
Yes. Seeing green tomalley inside a fresh lobster is completely normal.
A healthy cooked lobster may contain:
- White meat (tail, claws, and legs)
- Green tomalley
- Orange/red roe (in females)
The presence of tomalley alone does not mean the lobster is bad.
What Does Tomalley Taste Like?
Tomalley has a much stronger flavor than the lobster meat itself.

People often describe it as:
- Rich
- Creamy
- Salty
- Briny
- Slightly sweet
- Intensely “oceanic”
Because the flavor is concentrated, many chefs use small amounts to enrich sauces, seafood stews, or lobster butter.
Is It Safe to Eat?
